Turkey Meatloaf “Cupcakes”

Ingredients – Meatloaf

  • 1 lbs. Ground Turkey (do not use less than 7% fat)
  • 1 egg
  • ¼ bread crumbs (Italian seasoning adds great flavor)
  • ¼ cup chopped green pepper
  • ¼ cup chopped onion
  • 2 cloves minced garlic
  • 1/4 cup mozzarella cheese
  • 2 T ketchup
  • 1 T mustard
  • 1 T olive oil

Ingredients – Sauce

  • ½ cup Ketchup
  • 2 T mustard
  • 3 T brown sugar


In small bowl combine ketchup, mustard, and brown sugar for topping and set aside.

In a pan sauté onions, garlic, and green peppers in olive oil for about 3 minutes.  In a large mixing bowl combine ground turkey, egg, bread crumbs, cheese, ketchup and mustard.  Add onions, green pepper, and garlic when finished. Mix.

Place equal amounts in each space in a muffin pan (or place all of it in a loaf pan) and bake at 385 for 15 minutes (bake for 30 minutes if using a loaf pan). Remove from oven and add sauce and bake for 5 more minutes.
